Mutton Biriyani

Biriyani is a traditional recipe loved by almost every person. This is a simple pressure cooker style biriyani. This is made from Basmathi rice and its cooked with fresh herbs and spices. It can be served with onion raita or brinjal kichhadi. 

 

Preparation Time :40 minutes

Cooking Time :30 minutes

 

Ingredients:

  • Mutton -1/2kg
  • Basmathi Rice -2cups
  • Big Onion -3
  • Tomato -2
  • Ginger -2inch piece
  • Garlic - 10
  • Cinnamon/Pattai -1 inch piece 
  • Cardamom/elakai -3
  • Bay leaf/Biriyani leaf -1
  • Mint leaves/Pudhina -1cup
  • Coriander leaves/Malli leaf -1cup
  • Green chillies -3
  • Chilli powder/Milagai podi -2tsp or to taste
  • Coriander powder/Malli podi - 2tsp
  • Turmeric powder/Manjal podi -1tsp
  • Curd -2tblsp
  • Coconut milk -2cups
  • Mutton boiled water -1cups
  • Water -1cup +1 cup(for boiling mutton)
  • Lemon juice -2tsp
  • Salt -1tblsp or to taste
  • Oil -1tblsp or as needed
  • Ghee -1tblsp or as needed 

Grinding: 

Grinding 1:

  • Ginger -2inch piece
  • Garlic - 10
Grind ginger and garlic to a fine paste by adding water 
Grinding 2:
  • Coconut -1/2cup
Grind coconut and pour water and squeeze the milk from coconut and keep

 

Preparation:

  • Boil mutton and keep. Keep the remaining water from boiled mutton
  • Chop onion, tomato and green chilli to small pieces
  • Wash mint leaves and coriander leaves and keep
  • Grind ginger and garlic to a fine paste 
  • Take coconut milk from coconut and keep
  • Wash and keep the basmathi rice aside

Procedure:

  • In a pressure cooker, boil mutton by pouring 1cup water in it and keep for 4-6whistles in high flame
  • After the pressure goes by itself open cooker and take the mutton aside and keep the remaining water aside
  • In a pressure cooker pour oil and ghee
  • After oil gets heated add cinnamon, cardamom and biriyani leaf
  • Then add onions and fry till it gets golden brown in color
  • Add green chilli and mix
  • Then add tomatoes and mix till it becomes soft and the raw smell goes away
  • Add mint leaves and coriander leaves and mix
  • Then add ginger garlic paste and mix well
  • Add chilli powder, coriander powder. turmeric powder and salt and mix well
  • Add curd and mix well
  • Then add mutton and mix well till it gets coated with the gravy
  • Add the remaining water from boiled mutton
  • Then add coconut milk and remaining water and boil
  • After it gets boiled check for salt and spice taste and add a little if needed
  • Then add basmathi rice and mix it and close the cooker and keep for 1whistle in high flame and 3minutes in low flame
  • After the pressure goes by itself open cooker and pour lemon juice and mix well
  • Tasty mutton biriyani is ready!!!

Step by step procedure:

Add the remaining water from boiled mutton. Then add coconut milk and remaining water and boil
Then add basmathi rice and mix it 
Close the cooker and keep for 1whistle in high flame and 3minutes in low flame
After the pressure goes by itself open cooker and pour lemon juice and mix well. Tasty mutton biriyani is ready!!!

Note:
  • For 1cup basmathi rice add 2cups water
  • You can cook Biriyani in seeraga samba rice too
  • I usually don't add food color. Add food color to make biriyani look colorful and bright
