Banana Panchamirtham

This is a simple and tasty sweet made from banana. This is mostly liked by all and especially by children as it is so delicious and sweet. It takes only a few ingredients and less time to make. It is a healthy dish too as it involves banana and dates. Adding dates to it increases the sweetness.

Preparation Time :15minutes

Cooking Time : -


Ingredients:

  • Banana -1
  • Jaggery/ Vellam -1tblsp or as required
  • Honey -1tblsp
  • Rock Candy/Kalkandu -1tblsp
  • Dates -6
  • Dates Syrup -2tblsp(Optional)
  • Ghee -2tblsp
  • Raisins/Kismis -1tsp or as required

Preparation:

  • Peel banana and cut into slices and keep
  • Take dates and remove the seeds and keep

Procedure:

  • Take banana and peel its skin and cut into small pieces
  • Then add jaggery, dates, rock candy and mash it else grind slightly it in a mixer
  • Then add honey, ghee and dates syrup and mix
  • Then add raisins/kismis and mix
  • Banana Panchamirtham is now ready!!!

Step by Step Procedure:

Chicken Sandwich

This is a tasty and simple chicken sandwich recipe which can be had for breakfast or as a snack. The taste of the bread sandwiched with chicken fry and some masala will be awesome. This is a healthy dish too as it involves raw vegetables and chicken.

Preparation Time :15minutes

Cooking Time :15minutes

 

Ingredients:

  • Bread -2
  • Big onion -1
  • Tomato -1/2
  • Cucumber -2slices
  • Chicken Masala -1cup
  • Fried chicken pieces -1/4cup
  • Ghee -2tsp for toasting bread 

For Chicken Masala:

  • Chicken -1/2kg
  • Big Onion -4
  • Tomato -2
  • Ginger garlic paste -2tblsp
  • Green chilli -3
  • Red Chilli powder/Milagai podi -2tblsp
  • Coriander powder/Malli podi -2tsp
  • Cumin seeds powder/Seeraka podi -2tsp
  • Pepper powder/Milagu podi -2tsp
  • Fennel seeds powder/Sombu powder/Perunjeerakam powder -2tblsp
  • Curry leaves -a spring
  • Turmeric powder/Manjal podi -2tsp
  • Cornflour/Chola mavu -1tsp
  • Coriander leaves/Cilantro/Malli leaf -A handful
  • Salt -2tblsp or as required 
  • Water -1cup 
For Grinding:

  • Big Onion -2
  • Tomato -1
  • Ginger garlic paste -1tblsp
  • Red Chilli powder/Milagai podi -1tblsp
  • Coriander powder/Malli podi -1tsp
  • Cumin seeds powder/Seeraka podi -1tsp
  • Pepper powder/Milagu podi -1tsp
  • Fennel seeds powder/Sombu powder/Perunjeerakam powder -1tblsp
  • Turmeric powder/Manjal podi -1tsp
  • Salt -1tblsp

Grind everything to a smooth paste by adding some water 

For Fried Chicken Pieces:
  • Chicken -1/4kg
  • Red chilli powder/Milagai podi -1tblsp or as required
  • Pepper powder/Milagu podi -1/2tsp
  • Fennel seeds powder/Sombu powder/Perunjeeragam powder -2tsp
  • Ginger garlic paste -2tsp
  • Salt -1tblsp or as required
  • Lemon juice -1tblsp
  • Oil -for deep frying

Preparation:

  • Toast bread and keep
  • Chop onion and tomato into small pieces and keep

Procedure:

  • Toast bread pieces in a tawa by applying some ghee
  • After it gets brown turn to the other side 
  • After that take it out and take one slice of the bread and put chopped onions,  sliced tomatoes, sliced cucumber

For Chicken Masala:
  • Grind onion, tomato, ginger garlic paste, chilli powder, coriander powder, cumin seeds powder, pepper powder, fennel seeds powder, turmeric powder and salt to a fine paste by adding water
  • Take chicken pieces and wash and take it in a cooker
  • Add the ground paste and a cup of water and close the cooker and keep for 6-8 whistles in high flame
  • After the pressure goes by itself open the cooker and take chicken outside
  • Now take the bones outside and shred chicken into small pieces
  • Keep the water of the boiled chicken aside
  • Pour oil in a pan
  • Add fennel seeds and fry
  • After it splutters, add green chilli, curry leaves and onion and fry till onion becomes golden brown in color
  • Then add ginger garlic paste and fry 
  • Then add chilli powder, cumin seeds powder, turmeric powder, pepper powder and fry
  • Then add tomato and fry till it becomes soft and the raw smell goes off
  • Add the remaining water from boiled chicken and allow to boil in high flame for ten minutes
  • Now add the chicken pieces and boil in low flame for 20 minutes so that the pieces gets well coated with the masala
  • Add salt and mix
  • Add cornflour and mix. This gives a thick gravy consistency
  • After the gravy becomes thick switch off the flame and add coriander leaves
Apply this masala over the onion, tomato and cucumber

For Chicken Fried Pieces:
  • Wash chicken pieces and marinate with red chilli powder, pepper powder,fennel seeds powder, ginger garlic paste and salt and keep in fridge for half an hour
  • Then take it and keep outside
  • Pour oil in kadai
  • After oil gets heated, take the marinated chicken pieces and deep fry one by one
  • Drain the oil and squeeze lemon juice at top and mix
Shred this chicken pieces over the masala. Keep the other bread over it and enjoy
Chicken sandwich is now ready!!!

Fried Chicken Nuggets

This is a home made fried chicken nuggets which is loved by people of all ages. Chicken Nuggets is one of the tastiest meal which is made from chicken pieces which are cut, battered and deep fried or can be baked. It can be had as a tea time snack or as a side dish for rice, biriyani. Even kids too will be so fond of it. It can be made easily in short time but tastes so nice. The outer layer will be crunchy and crisp but soft inside. This is much healthier than a fast food. Now we can see about the recipe of this home made chicken nuggets

Preparation Time :20minutes

Marination Time :30minutes

Cooking Time :20minutes


Ingredients:

  • Chicken -300grams
  • Ginger garlic paste -2tsp
  • Chilli powder/Milagai podi -1tblsp
  • Cumin seeds powder/Seeraga podi -1tsp
  • Coriander leaves/Cilantro/Malli leaves -2tblsp
  • Salt -2tsp or as required
  • Egg -1
  • Bread -2
  • Oil -For deep frying

Preparation:

  • Wash and cut chicken into small pieces and keep
  • Beat an egg in a vessel and keep 
  • Powder some bread in a mixer and make it into crumbs and keep
  • Grind ginger and garlic in a mixer or you can use ready made ginger garlic paste bought from stores too

Procedure:

  • Cut chicken into small pieces and marinate it with chilli powder, ginger garlic paste, coriander leaves and salt and keep it for 30 minutes till it gets marinated
  • For ginger garlic paste you can grind ginger and garlic in a mixer or you can use ready made ginger garlic paste bought from stores too
  • Beat an egg in a vessel and keep 
  • Take bread in a mixer and grind it to make it into crumbs. This gives a crispy taste and a nice texture
  • Take the marinated chicken and dip it in egg first and then roll it in breadcrumbs and keep
  • Pour oil in a pan
  • After oil gets heated, put the chicken pieces and deep fry it and drain it in a paper towel
  • Then you can enjoy crispy tasty Chicken Nuggets
  • Tasty Fried chicken Nuggets is now ready!!! 

Step by Step Procedure:

Mix it with chilli powder, ginger garlic paste, coriander leaves and salt
Keep it for 30 minutes till it gets marinated

Brown Chickpeas Sundal/Brown Kondakadalai Sundal

This brown chickpeas sundal is a quick snack or can be taken for breakfast too. It is very healthy. It helps in building bone strength and maintains blood pressure. We have to soak it overnight before boiling it. The taste will be very nice after cooking and it is a very healthy dish too. Bachelors who are busy in their work can have it for their breakfast as it takes less cooking time and it has a lot of energy. It can also be taken as a tea time snack.


Preparation Time :15minutes

Cooking Time :30minutes+10minutes


Ingredients:

  • Brown chickpeas(dried)/Brown kondakadalai -1/4kg
  • Big Onion -2
  • Red chilli -2
  • Curry leaves -A spring
  • Coconut -2pieces
  • Green chilli -1
  • Fennel seeds powder/Sombu powder/Perunjeerakam podi -2tsp
  • Mustard seeds/Kadugu -1tsp
  • Urad dal/Ulutham parupu -1/2tsp
  • Cumin seeds/Seerakam -1/4tsp
  • Salt -2tsp or as required
  • Water- As required to boil chickpeas

For grinding:

  • Coconut -2pieces
  • Green chilli -1
  • Fennel seeds powder/Sombu powder/Perunjeerakam podi -2tsp

Grind everything coarsely. Don't add water while grinding.

Preparation:

  • Soak chickpeas with some water overnight
  • Chop onion into small pieces
  • Grind everything given under "For grinding" coarsely without adding water

Procedure:

  • Soak brown chickpeas with water in a bowl overnight
  • At morning, drain the water and pressure cook it by adding water in high flame for 3whistles and in low flame for 20minutes
  • After the pressure goes by itself open the cooker and drain excess water and take chickpeas and keep
  • Grind coconut, green chilly and fennel seeds powder coarsely without adding water
  • Pour oil in a pan
  • Add mustard seeds and after it crackles ade urad dal, red chilli, cumin seeds and fry
  • Then add onion and curry leaves and fry till onion becomes golden brown in color
  • Then add the boiled chickpeas and fry and switch off the flame
  • Add the grind-ed mixture and mix well
  • Brown Chickpeas Sundal is now ready!!!

Step by Step Procedure:

Butter Sweet Corn

Sweet corn is one of the easiest snack which you can make within minutes and enjoy. The natural sweet corn kernels alone gives a good taste. The steamed sweet corn flavoured with butter, salt and pepper gives an excellent taste and flavour. I am a big fan of this sweet corn and fresh corn will be much tastier than the frozen one. Also sweet corn is a starchy vegetable high in carbohydrate content. Sweet corns are also used in chat recipes, soups, salads and in many veg and non-veg dishes. By combining it with other foods, you can boost up the nutrient contents even more too.


Preparation Time :10minutes

Cooking Time :25minutes

 

Ingredients:

  • Sweet corn -1
  • Butter -2tsp or as needed
  • Salt -1tsp or as needed
  • Pepper -2tsp or as needed
  • Water -1cup

Preparation:

Remove the outer skin from sweet corn and remove the kernel alone and keep. You can keep it in fridge and use it later as a frozen one else you can use it fresh

 

Procedure:

  • Pressure cook the sweet corn kernels with one cup water for 3whistles in high flame and in low flame for 20minutes. Do not add salt while pressure cooking as it wont get cooked properly
  • Let the pressure go by itself. Now open the cooker and take the kernels alone
  • Discard the water
  • Now add butter and mix well
  • Add salt and pepper and mix well
  • Buttered sweet corn is now ready!!!
  • Serve warm... Enjoy!!!

Sakkarai Pongal / Sweet Pongal


Pongal  is a harvest festival celebrated by Tamilians at the end of the harvest season. Pongal is a four day festival which usually takes place at January. This sweet pongal also called as sakkarai pongal is made from newly harvested rice.

Preparation Time: 15minutes

Cooking Time: 45minutes


Ingredients:

  • Raw Rice / Pacharisi - 1 cup
  • Yellow Moong Dal / Pasi Paruppu - ½ cup
  • Jaggery / Vellam - 2 cup or extra as your taste
  • Milk - 5 cups
  • Cashew - 15
  • Sultanas / Kismis - 3 tblspn
  • Cardamom / Yelakai - 3
  • Coconut - ½ cup (optional)
  • Ghee - 2tsp

Preparation:

  • Take vellam and add 1cup water to it and boil and dissolve it
  • Grind coconut and keep

Procedure:


  • Pour 1 tsp ghee
  • Add moong dal and fry
  • Add rice to that and soak this both for around 15 mins
  • Then drain water and put this in a pressure cooker along with milk and cover with a lid
  • Cook for 3 whistles
  • Remove it and keep aside
  • Then add 1 cup of water to vellam and boil, and dissolve it
  • Pour this into cooker over dal and rice
  • Take a pan and add ghee in it
  • Add cashews, kismis and cardamom in it and fry
  • Now add this into rice mixture and stir
  • Grind some coconut in a mixer and add to rice mixture
  • Pour some ghee over it for additional flavor and taste
  • Sweet pongal is now ready!!

 

Step by Step Procedure:

 

Pour 1 tsp ghee. Add moong dal and fry
Add rice to that and soak this both for around 15 mins
Then drain water and put this in a pressure cooker along with milk and cover with a lid
Cook for 3 whistles. Remove it and keep aside. Then add 1 cup of water to vellam and boil, and dissolve it
Pour this into cooker over dal and rice
Take a pan and add ghee in it
Add cashews, kismis and cardamom in it and fry
Now add this into rice mixture and stir
Grind some coconut in a mixer and add to rice mixture
Sweet pongal is now ready!!

Note:


The color of pongal depends on the jaggery you use. Use dark color jaggery for a dark brown color
