Lemon Rice

This South Indian food is very easy to make, which can be prepared in minutes when we are in a hurry or when we have leftover rice. It can be packed easily for picnics in less time. We can make it on weekday mornings if we wake up a little late and have a little time for lunch preparation. The taste of lemon gives a refreshing and tangy taste to the rice

 

Preparation Time :10minutes

Cooking Time :5minutes


Ingredients:

  • Rice -1cup
  • Lemon juice -1(from one full lemon)
  • Mustard seeds/Kadugu -1tsp
  • Urad dal/Ulutham Parupu -1/4tsp
  • Channa Dal/Kadalai Parupu -1tsp
  • Ground nut/Nila kadalai -1tsp
  • Ginger -1/4inch piece
  • Green Chilli -2
  • Curry leaves/Karivepilai - A spring
  • Asafoetida/Hing/Perunkaya thool -1/4tsp
  • Turmeric powder/Manjal thool -1tsp
  • Salt -1tsp or as needed
  • Yellow food coloring -1/2tsp (optional)

Preparation:

  • Make rice separately and keep
  • Take the juice out of lemon and keep
  • Chop green chilli and ginger to pieces 
  • Keep all the other ingredients ready

Procedure:

  • Pour oil in a pan
  • After oil gets heated, add mustard seeds
  • After they crackle add ground nut, chana dal, ginger, green chilli and fry
  • Then add urad dal, curry leaves and hing and mix
  • Then add turmeric powder and mix
  • Then add lemon juice and salt and mix it with rice
  • Lemon Rice is now ready!!!

Step by Step Procedure:

Pour oil in a pan. After oil gets heated, add mustard seeds. After they crackle add ground nut, chana dal, ginger, green chilli and fry. Then add urad dal, curry leaves and hing and mix. Then add turmeric powder and mix
Then add lemon juice and salt and mix it with rice. Lemon Rice is now ready!!!
Note:

I usually wont add food color. If you want you can add yellow food color for the bright yellow color
