Carrot fry

This is a tasty side dish for rice. Carrots are very good for health as it improves vision, slows down aging, promotes healthier skin, cleanses the body and also protects teeth and gums.

Preparation Time :15minutes

Cooking Time :15minutes

 

Ingredients:

  • Carrots -2(grated)
  • Onion -1
  • Green chilli -1
  • Mustard seeds/kadugu -1tsp
  • Urad dal/Uluthan parupu -1/2tsp
  • Curry leaves -2springs
  • Coconut -3tblsp grated
  • Fennel seeds/perunjeerakam -1tsp
  • Salt -1tsp
  • Oil -1tblsp

For grinding:

  • Coconut -3tblsp grated
  • Fennel seeds/perunjeerakam -1tsp
Grind this coarsely. Don't add water 

Preparation:

  • Grate carrots using a grater
  • Chop onions to small pieces

Procedure:

  • Pour oil in a pan
  • After oil gets heated add mustard seeds
  • After they crackle add curry leaves
  • Then add green chilli, onions and fry till onions become golden brown in color
  • Then add carrots and fry
  • Cover with a lid and cook for 5minutes till they become soft
  • Switch off the flame and add coconut gratings and mix
  • Carrot fry is now ready!!!

Step by Step Procedure:


Pour oil in a pan. After oil gets heated add mustard seeds. After they crackle add curry leaves. Then add green chilli, onions and fry till onions become golden brown in color
Then add carrots and fry
Cover with a lid and cook for 5minutes till they become soft

Grind coconut and fennel seeds in a mixer
Now add coconut gratings
Mix well
Carrot fry is now ready!!!
